Is that square to the right of the microwave a chase for a cinder block chimney?
You may be able to gain some real usable space by getting rid of that.
It will be expensive to do unless you are doing it yourself.
I did my kitchen on a budget and did all the work myself except for the cabinet and hardwood install.
