Yes if I didn't have the porsche, I would only have the 3 cars.

I will talk with Hagerty again and will try to explain the situation better. Neither boy is allowed to drive the porsche so I would be ok specifying that if it helped. I would even be ok with forgoing the low cost of collector car insurance but want to make sure that I keep the agreed value clause. Can you get agreed value on non collector insurance? Have checked with my other insurance company and they will not cover agreed value for other than collector.
