Avgas is much purer than normal gasoline and has a lower vapor pressure so it won't boil at high altitude. I would imagine it is more stable than mogas, but racing fuel is just refined crude with some additive so it will turn to varnish the same as 87 octane will, if not quicker due to less alcohol content.
