Those are all tasteful and desired mods, so keeping them on the bike won't detract from their value. You have the originals, after all, for a collector who wants a museum piece. You'll make more money by putting the bike back to stock and selling off the individual mods, but it'll be more of a hassle. What's that worth to you?
I buddy sold his 600-mile PS last year and offered it to me. I passed, and I think he wound up selling it for $12K. I think he could have sold it for more, but what do I know?
Craigslist, ebay, Ducati.ms are all options. Heck, what ever happened to motion's bike site?
