I say absolutely on the brake fluid if in a sealed container. I have some ATE super blue that's older than that in sealed cans, I'll use it someday. If it looks perfect, it's fine.
Think about it, most cars on the road are running around with filthy, old brake fluid and still stop fine. If they somehow boiled their fluid, they'd be screwed but it takes a lot to get it that hot. I'm a bit of a dictator when it comes to maintainance and brake fluid changes but I don't buy that it goes bad or gets contaminated from time alone.
