Too much to the left means it's underexposed (too dark). Too much to the right means it's overexposed (too bright).

Ideally, it should be mostly in the middle.

You should also use the light meter if you have a dslr. Same concept except it tells you if it's under or overexposed before you take the shot.

if the graph clips on one side, then you lost detail on that side. With most digital cameras, you're better off being slightly overexposed than underexposed.
