porsche did the "staggered wheel thing" because of the 911. they got a name for that look, and applied it to the front engine cars. it was not necessary, and not best for handling.
in a car with an otherwise stock setup, i doubt you will see oversteer, as noted unless you are really swinging it around, but you would probably see less understeer.
also as noted, the factory dialed in understeer. this is common, and done for reasons of safety. the average driver needs things like that to keep them out of trouble.
all that being said, if you are increasing the front tire width, without increasing the wheel width, you will end up with some sidewall flex. this will be good for ride comfort, but not so great for ultimate transitional handling. the flex will cause the car to "bounce" or "wallow" as it goes from side to side. on a street car, this may not be a problem. if you plan to autocross or track the car, you may not be happy.
