I keep it between 2000 rpm and 4000 rpm until it's warmed up. After that I shift anywhere between 2000 rpm and 7000 rpm depending on what's happening around me. It depends on what I will be doing in the moments follwing the shift. If I expect to be accelerating I'll shift at a higher rpm but if I expect to be coasting, especially downhill, I'll shift at a lower rpm. It depends if I'm being careful with my fuel consumption too. Once in a while I see how well I can do and it's pretty impressive actually.
Otherwise - I do find myself cruising at 3000 rpm a lot when nothing special is going on, but not intentionally. That happens to be where the variocam plus kicks in and truth be told I'd rather not hang around on that point.
Don't over-think it though. Shift and cruise where it feels good but for gawd's sake don't lug the engine below 2000 rpm pretty much ever.
