I'm really married to the undermount, it's clean and modern. The worst that can happen is I buy a $45 blade and make some test cuts (only need 22x31 out of the slab) and decide to bring it down the street to be cut if it's starting to look unmanageable.
I'm fairly handy and enjoy doing a job right, and creatively, so I don't think this will be too hard. Put in my own hot water heater, plumbing and made my own shower from scratch, and I think my plumbing is significantly better quality than whoever did the original.
Have to redo the shower though, I made a base using home insulation foam core and carbon fiber and then laid neopren over that. It was fantastic, the soft neoprene under foot felt seriously great, impossible to slip and it lasted 4 years but a gf somehow tore it so I'm thinking of making a slate base now to compliment the bombay mahogany stained luan walls. Definitely recommend wood walls for a shower.
