There've been a couple movies about this scenario... and a buttload of books. Just re-read Vector a few months back.
The most recent movie with a realistic scenario was Contagion
Contagion (2011)
In one of the books I read, it described the virus as totally focused on replication and developing tactics to spread, including delaying onset of symptoms in order to gain more hosts.
