It's not pasta, but spaghetti squash is actually pretty yummy.

Also, Acorn squash baked. Lots of folks fill them with butter and sugar and then bake them. I find that they are plenty sweet without. I usually put a little butter in after baking.

Also, you may want to check these out. I haven't had these recipes, but I have had a dish with cauliflower "rice" and was surprised by the results. We're trying to cut down on the refined sugars and flours and lots of heavy carbs like potatoes and rice.

Cauliflower Rice - Primal Palate <- for this one we use the grating blade of the food processor. I would assume that with the processing blade, it would be harder to get the stuff rice sized, but I don't know.
