1 cup corn meal
3 cups flour
1 1/3 cups sugar
2 tablespoons Baking Powder
1 teaspoon Salt
2/3 cup vegetable oil
1/3 cup melted butter
2-4 tablespoons honey
4 eggs, beaten
2 1/2 cups milk
Preheat oven to 350 F, take large iron skillet and spray it generously with PAM or whatever cooking spray you prefer.
Mix cornmeal, flour, sugar, baking powder, and salt together. Pour in oil, butter, honey, eggs, and milk. Mix well. I use the 2 setting on my kitchen aid mixer. Pour batter into prepared skillet. Bake for 45 minutes or until the top starts to brown and show cracks.
This is the result of 2 years experimenting to find a moist, non crumbling cornbread.
You can also add chopped jalapeno, and red peppers to it, but that is up to you.
