You can nest hyper-v on ESX 5 and 5.1 but not practically done with Hyper-v on Hyper-v (you can install the role but you cannot run vm's). I would build up a nice server with esx and create a virtual lab. I have 25 vm's on one ml350 4 core cpu and the response is more than acceptable for a lab environment.
