Once upon a time, I owned a florist shop.

Do not order your flowers online. Choose one that is local. If you order from a 1800Flowers, FTD, Teleflora style website they take almost 50% of the cost. That means the local florist who delivers the flowers are either not making money on the order or they will cut the number of flowers in the arrangement to make money.

My suggestion is to choose someone close to where you want them delivered. You have a couple options: Pick a price range and give an idea of her favorite flowers and let them design it as they see fit or choose something like an arrangement of a single variety such as orchids or roses.

When I owned my shop, the arrangements that got the most praise, were the tropical arrangements. They are different then just roses.
