What are you using as a reference for level? Just the muffler?
Assuming your car is level L>R. the motor mounts should be more or less parallel to the ground; so should the rear mount bar, the tops of the carbs on both banks (to name a few reference points) and the muffler.
Use a carpenter's level or equiv. and compare those surfaces. If only the muffler is off, is it a recent purchase? Could be the inlet pipes are uneven for some reason, maybe just the tailpipes?. If the surfaces mentioned above are off by the same amount, could be the mount bar needs a closer examination. Bent? It can be adjusted a slight amount by loosening the mounting bolts in the middle. Also check the engine and gearbox mounts (4 total) to make sure they're still intact.
