Single throat Mikunis, Strombergs, Dellorto, etc. carbs have been previously installed by various people. I assume they have worked after dealing with adapters, linkage and mixture settings. In addition, they're probably more adaptable/tunable than the average vintage domestic Rochester or Carter carbs (throat/throttle bores, jetting, etc.)

The average enthusiast is most likely satisfied with the factory carbs which work fine other than the cost of entry (from EFI/MFI) and needed refurbishment. In addition, the factory Weber and Solex carbs are quite tunable (less so for Solexes) with a large library of tech info as it applies to our cars.
