Roast turkey, stuffed w/ aromatics
Gravy from drippings
Oyster dressing
Mashed yukon gold potatoes
seared then steamed green beans
fresh made cranberry sauce using OJ from the trees in the side yard
from scratch apple pie
ice cream
The oyster dressing - generic stove top style stuffing in a bag, for each 14 oz bag use 1 pint oysters, reserve juice and add enough new castle brown ale to make the 2 cups liquid needed. 1/2 stick butter and oyster juice, beer, and half a large onion diced up. In large pot on medium high heat add the diced onion and butter, salt and pepper to taste, let butter melt and lightly cook onons. Add liquids, bring to a boil, add oysters, let oysters cook for a minute, remove from heat, mix in stuffing. Add more salt, garlic, black pepper, etc. to taste. Transfer to oven safe dish, bake uncovered at 300-350 (what else is baking at last minute while the turkey rests?) until internal temp hits 150 (measure from a few places around your dish), don't let the top burn
The green beans - Snip and wash your beans, leave 'em a little wet. Sprinkle with black pepper, kosher salt, paprika, garlic powder, onion powder, and a little chili powder or crushed red pepper flakes. A table spoon of olive oil, mix it all up, move it around so the beans all have some olive oil and spices on 'em. Get a large pan good and hot, add a little more olive oil to it, dump in the beans, let 'em sear up a tad, move 'em around, then cover and reduce heat. If needed add a little more water to get some steam going under the cover, cook to desired doneness.
