Agreed, KSC is incredible. Unfortunately, Fantasy of Flight closed to the public earlier this year. Bummer, as it was also incredible.
JeremyD nailed it on the head. Warmer the further south you go, east coast is cool but not as nice as the Gulf coast. The only thing I would add is that the beaches get nicer the further south of Tampa you go. Also, The Tampa/St. Pete beaches will be getting crowded for spring break.
I grew up in Orlando and spent many a weekend at New Smyrna. It's cool and is nicer than Daytona but as someone said earlier, you are going to be competing with early spring breakers... and personally, I prefer the Gulf coast. True, the surf is usually much calmer, but there are other things to do in the water besides surf...
