Something to be aware of, at late hours in Arkansas, 50% of the gas stations we stopped at in Akransas were totally closed - wouldn't even take a card at the pump. Don't count on the small towns. I don't know why, but I suppose there are areas heavily dependent on welfare/disability/crime, and making a living working over night weekend vs welfare/crime, and potentially be robbed maybe isn't taken up.
Out further west, on my past few trips, no issues with closed stations, its just a matter of space apart can be 1 1/2-2hrs.
GPS if its not smart, can you lead into closed/non existant roads. Lot of GPS drivers end up taking the dead end dirt road off the dead end paved road and end up with a

when it dead ends at my parent's driveway when the GPS lays out a path that says they need to cut across my parents yard, through the woods behind their house, across a creek with no bridge, through more woods, through a housing development, and then the road they are looking for.
