Thanks for all the replies and info so far - especially our resident zen-master Steve M.....I admit I Googled about 10 items in your post because I had no clue about the monkeys or General's toasted rice tea. I learned something along the way - thanks, Steve!

I hope some other members will chime in. In the meantime I will continue to research and experiment going forward.

FWIW I have been drinking tea all my life in various capacities but seems the last 5 years or so I sorta got out of the habit. I'm very pleased I took the initiative to resume the practice. There is so much history behind the art and science of tea that I find interesting.
