Can I also see who sent the email before it was forwarded and when? Can I look through the 'tree' of an email?
I have 500 emails in pst format, but they were all forwarded. I need to collect the data from the email prior to being forwarded...

You have a bunch of emails that are all forwards.
You want to see the history of the thread.
Typically a Forward will show the From and To (except BCC on To) in the body of the email.
Now it could be that you only see the vanity name, John Doe vs
johndoe@somedomain.com.
Meta information is referred to as the Header.
Modern email clients hide the Header on forward or reply unless it has been set to show beforehand.
Meaning they only send the text that you see in the body.
