IMO that first TREK you linked is the way to go. Clean it up, tune the brakes and shifting, new cables where needed, new rubber, and ride the thing. If after 6 months you really start to notice that you are hampered by gear you can upgrade then. It can be a slippery slope - bicycles get really spendy quickly.
