You might be surprised at what you can do with leather. I wouldn't give up on it just yet. WHen you can, post some photos of the various panels.
The dash may have been black to start with. It depends on whether it is a leather dash or not. Post pictures of the dash at some point and let's see what you have.
As an example, this was a similar vintage interior that was dyed 3 or 4 different shades of tan and looked like hell when I got it. Some time and TLC later:
