You will not be able to fit the dual 964/993 side mufflers, as the oil tank will be in the way in the wheel wells where they normally sit.
One outlet is quieter than two. Small diameter outlet is quieter than large...
I wouldn't worry too much about it being "too" quiet. I have about as quiet an exhaust as you can get on a 3.6 swap without moving the oil tank, it ain't all that quiet...
