I've been vegetarian (but not vegan, which is a subset of vegetarianism and much harder to live / practice) for over 25 years. "Veggie bacon" has been available for a long time - this is nothing new. Ditto "veggie sausages", "veggie burgers", etc.
Bacon (and sausage even more so) derives a lot of its flavour from the treatment and spices used during preparation, the binder / substrate is less important.
I'm not crazy about the "veggie bacon" honestly - I have it on occasion but it's a bit too reminiscent of the meat product ("regular bacon") which I find revolting. It's getting too close. I had a "veggie hot dog" a year or so ago and I almost puked because it was just way too real and the thought of eating a real hot dog (and what they're made from) was so completely nauseating to me.
I guess it's a good thing though. If it encourages more people to eat healthy and in ways that aren't supportive of truly barbaric and cruel practices (meat "factory" farming / animal slaughter) then it's a good thing. I'm a bit of an idealist on this subject - I'd like to think that people will eventually learn that it's really to our collective benefit as a species to shift to plant-based rather than animal-based products / nutrition.
