If you are looking for dirt, Paul knows far more than I about the area. If nice paved roads are what you want, I'm in Montrose, CO now and was across some of this area yesterday:
Option from SLC: Go east on either 190 or 92, (both good). 190 turns into 152 and both return to Provo area via 189. You will be up in ski country near Park City, Heber City and Sundance.
From Provo, I-15 to Spanish Fork and east on Hwy 6. Then south on 96 to Scofield, then 31 to Hunginton. South on Hwy 10 across I-70 where it turns into Hwy 72 to Loa. Then Hwy 24 to Torrey, then south on Hwy 12 (Devils Backbone) to Esclante (watch for cattle, open range). Do Bryce Canyon, then Zion. Then I-15 again into Nevada and south on Hwy 169 along Lake Mead. That turn into 167, then rt on 147 which is Lake Mead Blvd into Vegas.....
Just one option, there are others....Enjoy....
