Just looking through some of the pics on my hard drive here's what I like...
Porsche - Jaegermeister 934, 550 and several 917's of course - oh, and a 908spider and a 904, it wouldn't be right to leave out an RSR either
Ferrari - Original GTO, 288 GTO or F40 would be fun, Pro drive 550, racing Daytona
Ford - MKIV, GT40
Audi Quattro Sport
BMW - CSL, M1(racing version)
Alfa - T33, stradale (most beautiful car ever built?) or those lovely saloons from the 70's
Jaguar - Lightweight e-type, XJ13 (maybe that's the most beautiful car)
V16 Auto Union
Type 35 Bugatti
