if i was to compete in a neighborhood burger contest..i would use a 50-50 mix of skirt steak and short rib.
filet needs to be cooked rare. crazy rare. any more cooked than that, it develops a livery flavor for me.
i categorize burgers into two groups. fast food/chain burgers, and gourmet.
for me, i love the Whataburger mention above..or a NM Blake's Lota-Burger for fast food. yum.
