Not sure where you live, but 2x6" walls don't cost much more and get your R value higher.
Another small tip is to install your outlets higher that 4ft, people seem to always use 4ft, but if you lean a 4x8' sheet against the wall, you lose the use of the outlet, so put them a bit higher.
Rent a drywall lift for the ceiling- trying to hold sheets up and screw them up at the same time is miserable.
