With bacon you're probably screwed. I make my sausage without any preservatives, but there is a ton pf spices in it to change it's flavor. They are the same spices used in a lot of other dishes. Cooking meat at high temps - enough to char it, produces benzine rings, which have been known to be carcinogenic for a long time.
