I've not driven a 991, and I certainly have not wrenched on one. But from everything I have seen and read they appear to be a GT car that is much larger than the 997 with much worse maintenance access, and much more complexity. I'm sure I'll eventually end up with one, so maybe I'll find that I'm totally wrong.

Modern cars are so good, I find myself craving experience more than performance. Any 911 from the last 25 years will get you into legal trouble very quickly, at some point the numbers become arbitrary. As I've posted on the affordable 996 thread, my favorite water cooled 911 thus far has been the 1999 996 C2. Lightweight, simple, raw, responsive. Every evolution from that point has been to make the car more comfortable, stable, quieter, and yes faster. But each evolution has cost the car some character, at least in my opinion. While I prefer the 997 styling, I find them somewhat boring in some ways.
