I've never been much of a poi eater, but diced taro cooked in coconut cream then added to fish stew is to die for!

Thanks for mentioning the Na Pali boat trip Scott. That almost goes without saying for me. It should be near the top of the to do list for visiting Kauai.
Even on the roughest of days Na Pali will reward with something amazingly beautiful.
The whales are here in numbers this time of year.
I'd recommend doing the trip from Hanalei, but this time of year most of the trips run from the west side. Still good from that side, just best to go for the bigger boats then, like holo holo, or Captain Andy's big cats. There is a lot of distance to cover and the rougher conditions shut out the caves anyway.
In smoother conditions there are sea caves to be driven thru in the the smaller boats that run from a Hanalei.

Got to experence Na Pali while on Kauai, one way or another !!
