Sounds like your float needles aren't cutting off the fuel supply as your floats raise.

I had this happen on one of my carbs - found the rubber tip on one of the needles had broken off.

Seems odd that you have multiple needles out of whack and not sure how that's possible if you recently replaced them - but I can't imagine anything else.
