That's the problem with IBS, there ain't no such thing a plan ahead.

For the first year after my foot thing I kept a log of what I ate, when, my blood sugar, my execise, all my intake and output. Found for me it just wasn't that simple. Sometimes no matter it is it has an immediate effect, sometimes a couple of days. That's why it is called IBS.

Sometimes you can pass gas like regular people, sometimes might as well spend the next few hours on the throne. I've replaced the seat with one of those padded ones for just those occasions.
