The stability control fights the throttle position as you release the clutch. It's weird. With the esc off it will free rev the engine with no computer input. When you run the car with VCDS it will unlock all the goodies.

It might just a TDI thing...
At least for VW, you only have to hold the esc for a few seconds to disengage. I know for Jaguar you have to hold the esc button down for 10 secs to disengage the traction control...
