It might be a good idea to have a "Credit or Debit Card Only" payment policy (with a coupla highly visible signs on the cart).
For obvious reasons.
YMMV, but a Subway not far from us did that because they kept getting held up. They had an entrance from the sidewalk out front and one from the parking lot in the rear.
