i like cooking beans in a dutch oven pot in the oven.

just some chicken or veggie stock. then put some in a bowl, big scoop of fresh pico-de-gallo, some sour cream (or yogurt). my favorite bean right now is great northerns..a white bean.

or pasta. cook pasta. in a pan cook some cherry tomatos until they explode and cook down and sweeten. then put in a dollop of pesto. (i cheat, i get that bigass jar from costco). toss it into the pasta and go. dont over sauce it. the next day, the chilled stuff is a damn good pasta salad. i pour it over spring greens.
