You need to have some sort of corrosion inhibitor and water pump lube in the cooling system. The best way to get both is to use coolant. The temperature increase you're seeing is likely due to a faulty low speed cooling fan resistor. Once your temp starts to get up above 180 BOTH cooling fans should come on. Make sure you have both fans. The one that does not come on has a bad resistor.
