The Boss 302 seems to be about a $30k car, with the Laguna Seca carrying a small premium. I suspect they will continue to depreciate as the new Shelbys get cheaper. The problem with any modern muscle car as an investment is that they just make too many to be rare. But they are fun, and should depreciate far slower than a normal car.
