My grandfather worked for a living at Armor and Co. Cutting up dead animals. They were already dead by the time he put knife to meat. He had a million stories about the place. He worked there from the time he was 17 to the time they closed the plant down about 40 years later.
Anyway he talked about pigs. He said the old adage, everything was used except the squeal was 100% true. He said even the contents of the guts were put right into a compost pile and they sold the compost when it was ready. He said he never understood people eating pig snout until the depths of the depression. When you are HUNGRY any food is wonderful and tasty. He would not eat hot dogs when we were kids. He knew that they were not like the old days, but he just could not bring himself to eat them.
I have his favorite knife. He took it to work everyday. It is a great butcher knife.
