one of our nutrition instructors (for health sciences programs) says "If you want to be vegan or vegetarian, a good way to know if you are eating healthy is to see how many different colors are on your plate. 3 minimum, 5 per meal is best"
From the vegans I know who AREN"T just using fake meat products (fake chicken tenders, etc) as substitutes, this holds true for the most part.
