Most people make the mistake of over grilling thier meat. We have friends that like all of their steaks/chops/burgers/dogs almost burnt, and void of any moisture or juices. I, on the other hand really like to grill just to the point of safety (temperature wise), and prefer a pink tinge in my burger, and steaks that sre almost rare....so much better taste.
Many times, I will sacrife one chop, or burger for myself by cutting it open to see the inside, and making sure it isn't overdone.
