May I suggest the Thermapen thermometer by Thermoworks.

Most accurate and fast thermometer I have found. My original one is 6 years old and still bang on accurate and have purchased many as gifts for others. Have another that is back lit for winter use.

Saves you from cutting open anything on the grille and can measure accurate temps in thin cuts and fillets. Used it last night on my planked salmon but that is another thread altogether!

I use a mixture of beef and pork and form them into patties, freezing the extras on a cookie sheet then use the foodsaver to vacuum seal them for future use in packs of two.
