For those of you that have some cooking skills, and think that eating an In-and-Out burger is like chewing on a cat turd, I've got a recipe for you.
Slice some red onion fairly thin, bring some pickling liquid to a boil, add the red onion and let it steep until cool. Google how to pickle things, if you've never done that.
Make an aioli with mayonnaise and garlic, then add some chipotle seasoning. You can use chipotle powder or real chipotles in adobo. Add a little cayenne powder for extra heat. Let this go hang out in the fridge for a few hours to get happy.
Grill a jalapeņo pepper and slice it thin.
Make a nice sized (8-10 oz) burger patty out of some good beef. You want an 80:20 lean to fat ratio. Season it fairly aggressively with sea salt and pepper. Grill it over charcoal until it's about medium rare. When you grill the second side, layer the jalapeņo slices on top and top with a couple thick slices of jack or jalapeņo jack cheese.
Take a nice quality bun, not a grocery store hamburger bun, but decent bread. Cut it in half and lather it generously with the aioli. Add a fair amount of arugula to the bottom bun. Add the meat patty, then top it with the red onions, some cilantro and the top bun.
If you make this right, it will be a religious experience when you eat it. If you don't make it right, keep at it until you figure it out and have your religious experience.
