you can get headers with heat from Brian. I went without heat in one of my cars and I missed it... but I am getting old!!
capping the heat openings keeps everything clean and provides a finished look. If you ever decide to go back to heat, you would be surprised how much "stuff" has gotten into the uncapped areas.
