We don find that to be true at all, the seam that's IN the sink is a lot easier for us.
We have Blanco Precis faux granite sinks and they are bulletproof.

The wash sink is 27" wide and 8 3/4 inches deep. The prep sink is about 18x18.
We use the plastic pan for wash water and rinse on the right. We can take the pan out to wash the BBQ grill, big pots and pans, or small alligators.

The sinks are far enough apart (prep sink is in the island) that two can easily work in the kitchen at once. One big mistake was putting the silverware drawer in front of the primary work surface. Things stored in front of the primary work surface should be occasional use items.
