mod choke will perform like a full with steel. any tighter and theory says the steel will fail to compress and bulge the barrel and/or blow the pattern.
I use #2 for late season (ie fat) ducks. I'd take a poke at a Canada goose if it happened by close enough. not sure on sandhills. google is your friend there.
no idea what you mean by trimming magazine stop in the 1187 based on shell length? the gun either accepts 3" shells (you can verify by looking at stamping on the barrel tho I'm fairly certain 1187's are 3") or it doesn't. no magazine mods are necessary.

Well i had #6 adjusted perfectly but then just before i tightened it a butterfly in Zimbabwe farted and now i have to start all over again!
I believe we all make mistakes but I will not validate your poor choices and/or perversions and subsidize the results your actions.
