Vash, pass on the Weber. Seriously... I shunned the Green Egg for years. My justification was that the Weber does a great job and how can the Egg possibly do it better for $1,000 +/-? Well, I finally gave in and bought a Kamado Joe (slightly improved version of the Egg) and I will NEVER go back to the Weber. It is worth every penny. Smoking a brisket on it right now as a matter of fact. You can set it to your desired temp and it will stay there all day rock solid. Without adding more charcoal. Keeps moisture in so food does not dry out. Food comes off tasting exponentially better than my best effort on a Weber kettle.
Trust me - just go buy one and pass on the Weber. You can thank me later.
