Series just means the the same oil would run through two coolers and get cooled twice before returning to the engine. Parrellel would split the work load of equal oil into two different coolers
2 series coolers w/ properly sized fittings are exactly like 1 big cooler, each X# of cm2. will remove Y# of KCals of heat. The t-stat will try to keep oil temp above 80&deg C and the coolers will try to keep it under. The biggest impediment to oil cooling isn't the oil flow so much as the air flow over the coolers. You would be amazed at how small a cooler in the valance where there is a tremendous flow of cooling air is equivalent to a massive fender mount where flow is marginal at best.

The problem w/ // coolers is that they will not flow equally, one will always have more flow resistance than the other The % of difference in flow resistance will directly correlate to the cooling accomplished by each.
