I tend to go with Apple chips. I prefer a mild smoke flavor.
Only use smoke for the first half of the cooking process.
For a real treat, try smoking some dry rubbed full wings (not drummies or elbows ) to medium rare.
Then, drop in a deep fryer for a few minutes to finish and crisp up the skin.
Lightly sauce to taste.
Delicious.
